Carrot + Lentil Soup

Goes well with: bread
For freezing: can be frozen before or after cooking.
Ingredients:
Ground cumin 2 tsp
Chilli flakes a pinch
Olive oil 2 tbsp
Carrots 600g
Red Lentils 140g
Veg stock 1 letre
Milk 125ml
Plain yoghurt a dollop per serving
You could also sneak in any other veggies you might have lying around.
How to make:
Grate the carrots and make the veg stock.
Then chuck everything but the yoghurt in a pan and bring to the boil
simmer for 15 mins (until the lentils are swole)
Whizz it all up with a stick blender
Then serve with a dollop of yoghurt on top
