3 Bean Chilli

Goes well with: this episode of Three Bean Salad, as well as wraps, doritos, salsa, guacamole, sour cream, and cheese.

For freezing: freeze after cooking.


Ingredients:

Mushrooms 250g

Onion 1

Red pepper 1

Coriander 2 tsp

Cumin 2 tsp

Chilli flakes 1 tsp

Paprika 1 tsp

Salt 1 tsp

Olive oil 1 tsp

Cannelloni beans 1 tin

Black beans 1 tin

Red kidney beans 1 tin

Chopped tomatoes 2 tins

Veg stock 200ml


How to make:

Chop the mushrooms, onion, and pepper, then mix with all the spices and oil.

Cook for 25 mins.

Drain the beans and make the stock then mix with everything else and stick it back in the oven for 35 mins.
