Joe’s Easy Pie
aka Spinach + Feta Pie

Goes great with: roast potatoes or wedges
For freezing: basically all of the ingredients are freezable, it’s probably best to freeze them all individually though as you’ll still need to squeeze the moisture out of the spinach before baking (I didn’t know you could freeze feta either but google says it’s fine???)

Ingredients:
Spinach 400g
I’ve started to actually use frozen spinach, it usually works out cheaper and means that I don’t have to worry about it going bad or taking up all the space in the fridge!
Vegetable oil a splash
Feta 300g
Garlic 3 cloves
Puff pastry (pre-made) about 320g
egg or milk (to brush on top)
How to make:
Wilt your spinach in a hot pan with a little vegetable oil, then drain and let cool.
Once it’s cooled then wring out as much moisture as possible using a tea towel
This will almost certainly strain your tea towel so use one you don’t like much
Mix the spinach with the feta and garlic, and add a little salt and pepper if you’ve got it.
Then dollop it onto one half of the puff pastry, then fold the other half over the top.
Squeeze the edges together with your fingers or a fork, then brush the top of it with a little egg or milk. Make sure to also score the top!
Bake for about 30 mins (you might have to turn it half way).
