Tomato and Mascarpone Risotto

Ingredients:

Olive oil 2 tbsp

Onion 1

Garlic 2 cloves

Risotto rice 175g

Chopped tomatoes 400g tin

Veg stock 600ml

Parmesan 30g

mascarpone 30g

Basil if you like


How to make:

Prep

Chop the onion up as small as you can.

Ditto the garlic.

Also make the veg stock.

Cooking

Okay so the original recipe tells you to add things gradually and to stir continuously but that doesn’t sound like fun so I usually just chuck everything (but the cheeses) in one pan all at once, stirring it when I feel like it and taking it off the heat after about 20 mins.

Then stir the cheeses in just before serving.
