Sweet Potatoes + Mozzarella

Ingredients:
Oven
Sweet potatoes 4
Red onions 2
Olive oil
Salt
Mozzarella
Dressing
Basil
Olive oil
Garlic powder
Salt
Lemon juice
How to make:
Chop the sweet potatoes into like quarters, ditto the red onion. You can also chuck in other veggies that might need using up.
Stick them in the pan and cover in a little olive oil and salt.
Bake on high for 55 mins.
Meanwhile, mix up the dressing. I usually eyeball it and I also usually use the dried stuff rather than anything fresh.
After 55 mins, take out the oven and put the mozzarella over the top of all the veggies, then return to the oven for about 5 mins.
I would recommend chopping/cutting the mozzarella into small bits because it will make it a little easier to eat.
