Chipotle Roasted Sweetcorn

Goes great with: pitta bread

For freezing: you can freeze all the oven ingredients together before cooking, then it’s just ready to go in the oven whenever you fancy it


Ingredients:

Oven

Squash 750g

Pro tip: buy frozen squash and save time chopping (plus it usually works out cheaper)

Sweetcorn 4 cobs or like 300g

If you’re gonna freeze it in advance or you have wobbly teeth, use frozen sweetcorn rather than corn on the cob

black beans 400g tin

chilli flakes 2 tsp

ground coriander 2 tsp

ground cumin 2 tsp

salt 2 tsp

Olive oil 2 tsp

Post-oven

line juice 1 lime

I usually just eyeball it out of the bottle though

feta 200g

or buy the one called ‘salad cheese’ it’s exactly the same but usually cheaper

coriander 25g

spring onions 2

sour cream


How to make:

Chop the squash (if it needs chopping) and rinse the black beans.

Then mix with all the oven stuff and chuck in the oven for 45 mins.

Chop the coriander + spring onions and serve with all the other post-oven bits.
