Broccoli Quiche

For freezing: freeze the innards and pastry separately, defrost overnight before cooking. Add the walnuts in afterwards, they don’t feel like something you should be freezing, I dunno.


Ingredients:

Puff pastry (pre-made) about 320g

you can use shortcrust pastry for this too, but if you eat as much quiche as I do, it’s nice to have a bit of variety! If you are doing shortcrust, blind bake it for 15 mins before doing anything else.

Broccoli 300g

red onion 1

chilli flakes 1 tsp

Stilton 125g

Walnuts 30g

Single cream 100g

Eggs 4


How to make:

Over the pastry, scatter the veg, walnuts, and cheese.

Beat together everything else and pour it over the top.

Bake for 30 or 40 mins.
