As a neurodivergent person, food and feeding myself has been a struggle for me in some form or other throughout my life. After encouragement from the Joes while living with them, in the last few years I’ve really built my confidence in the kitchen.
Cooking is still really hard for me though, so I’ve developed a whole collection of reasonably simple recipes with a whole bunch of tips and tricks to make them easier, or save some for later. I’m all about meal prepping, bulk cooking, and freezing things. But most of all I’m all about filling my body with delicious food that meets my needs.

Is vegan/can be made vegan
anything that isn’t already vegan, I’ve written here what needs swapping.
Mashed Potato - just change out the butter for a vegan spread or milk alternative.
Paneer Korma - swap the yoghurt for some kind of vegan yoghurt or cream.
Carrot + Lentil Soup - change the milk for a milk alternative, you can do the same with the yoghurt or just leave out that bit.
Jacket Potato - either replace or just totally forget about the butter.
